Roasted Prosciutto Wrapped Asparagus Bundles
- 1 1/4 lb thin asparagus spears, tough ends trimmed
- extra virgin olive oil
- Balsamic Vinegar
- fresh cracked pepper to taste
- 4 slices (2 oz) thin sliced prosciutto
- String Cheese (optional)
Preheat oven to 400°.
Wash the asparagus and cut off any rough ends. Gather 4 or 5 pieces of asparagus and if using string cheese, place pieces of it in the middle of your bundle. Wrap one piece of prosciutto around the bundle then place on a baking sheet. Continue to do this with the rest of the asparagus and prosciutto. Drizzle with a little olive oil and balsamic vinegar and season with some fresh black cracked pepper.
Bake 12 minutes or until asparagus is tender crisp.

My opinions: SOOOOOO GOOD! Loved this and ate it all! There were no left overs, even my “picky” husband loved it. The even better part, is it’s not that bad for you either!
