I’m not gonna lie, I have woken up twice this week thinking it was Friday! Unfortunately for me, it was Tuesday, then again Wednesday… Not Friday. Maybe I am just really excited to get to to the weekend because me and Josh are going to Austin with some friends! woop woop! (the pups will be excited too becasue they will be staying the weekend at Petsmart and having play time with all of their little friends) Then when we get back on Sunday, we are celebrating my”baby” brothers 15th birthday! Burgers and WWE 🙂

Anyway, wanted to share a recipe that we made last week that Josh really liked! It was a jalapeno cheddar corn bread! What I really likes about it was I got a new cooking pan expectantly to make it in,and it was my first time using cast iron!


It was super cheap on Amazon!!

Here is the recipe that I used

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 to 1/2 cup honey (if you want it on the sweeter side, use the full 1/2 cup!)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 beaten eggs
  • 1 cup buttermilk (see note below)
  • 1 cup grated cheddar cheese
  • 1 heaping spoonful salsa
  • 1 jalapeno, chopped and seeded
  • 1/4 cup finely chopped green onion

Grease 9×9 baking pan (or this cast iron pan). Preheat oven to 425. Mix dry ingredients, leaving a well in the center of the bowl. In another bowl, mix eggs, honey and buttermilk. Pour into well in dry mix and stir until incorporated. Add cheese, salsa, green onion and jalapeno. Stir until incorporated. Spoon into prepared pan. Cook for 20 to 25 minutes or until a knife inserted in the center comes out clean.

Oh man was this good! Corn bread has been some what of a challenge for me to make, but I believe i have found a winner!

Monday oh Monday… we meet again

Is it just me, or are there others out there that cringe a little on Sunday night when you have to set the alarm for Monday morning? No just me… Oh well…

It’s been a Monday, that’s for sure! As I walk into work this morning I was hit with a heat wave after getting off the elevator. Apparently the AC had gone out over the weekend and it was well over 80 degrees in my office (why did I even try and look cute today?!  *sigh* Melted make up is not a good look!)

Despite the fact it is again Monday, I had a GREAT weekend! Hope everyone else did also!  Got to take the pups to the park, and got a ton of cleaning done! It always feels better to walk into a clean bathroom or kitchen.

After church on Sunday we went to eat at one of Josh’s favorite restaurant (because he got a groupon) called Bobas Noodle House. I’m not gonna lie the place has really grown on me and its delish! To top it all off, we have recently discovered their Boba drinks… and HOLY COW!!! If you are in the area and looking for a refreshing drink, go grab you one of these bad boys!

I love the lychee colada!!

Last night while grocery shopping we decided on an impromptu date night full of wine and cheese. We have this Kroger by our house that is NUTS!! They have a huge selection of crazy cheeses so we decided on 3 different types, a mango ginger cheese, Merlot Belavotano and Parrano cheese,with  some sausage, crackers and olives! It was such a treat 🙂

I had said I was going to post a recipe for the corn bread, and I will, later.

So the weather here in Texas is so up and down lately (well actually all the time, but a lot right now for some reason) And it was a great day to take the pups to the dog park!

Now, the dog park is a newer experience for them and it’s taken them a few times to feel really comfortable with getting out there and having fun. Today though, we couldn’t keep up with them!! They were having a ball and playing with all the other dogs out there. I guess they were enjoying the weather also. Let me take a moment to introduce my puppies to you!

This is our little diva, Chloe. She LOVES car rides! She was the first dog we got on the day we got back from our honeymoon almost 2  years ago. She turns 2 years old on Tuesday, March 27th and you better believe there will be gifts 🙂

Next we have our little sweet boy Shiloh. We have had him for almost a year now! He really is one of the sweetest dogs I have ever meet (my parents have a pretty sweet one also). He also loves car rides… so much so, he has even jumped out of a moving car!! (Josh was driving very very slow in my parents neighborhood and he was just to excited he flew out the window!! Thankfully I was not there to see it)

You would think when given the opportunity to run freely at a dog park, these guys would be in totally different directions! But nope, you can tell these little guys are sister and brother because they are always by each others side. (It’s pretty adorable!)

Just making some new friends. Don’t know why, but this time Shiloh felt it was his duty to great every single new dog that walked into the park!

Within an hour these little guys are pretty tuckered out and just pass out in the car!




Anyway, I told a few you I would post some of those recipes that I made in the slow cooker last week so, being true to my word… here they are!!   (I will also have a new one later, it’s a jalapeno cheddar honey cornbread in this brand new cast iron corn bread maker thinggi..)



Teriyaki Pot Roast

Of course this is not my picture, mine would never look that good!!


  • 1 boneless pork shoulder butt roast (3 to 4 pounds), I also use a Beef roast and it’s just as tasty!!
  • 1 cup packed brown sugar
  • 1/3 cup unsweetened apple juice
  • 1/3 cup reduced-sodium soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Add any “pot roast veggies you want!!  I usually add onions, cut up potatoes and carrots


  • Cut roast in half;  (I skip this step, I always just slather that baby with brown sugar and plop er’ in) rub with brown sugar. Place in a 5-qt. slow cooker. Pour apple juice and soy sauce over roast. Sprinkle with salt and pepper. Cover and cook on low for 6 to 8 hours or until meat is tender.

Now this is where I stop and eat it, however, you can make a gravy out of the broth if you would like by removing the fat on top and adding a mixture of 2 tablespoons corn starch and 3 tablespoons cold water, then cook another 15 min


The other recipe I was asked to post was this one

Crock-pot Ravioli Casserole


  • 1 1/2 lbs. lean ground beef
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 (15 oz.) can tomato sauce
  • 1 can stewed tomatoes
  • 1 tsp. oregano
  • 1 tsp. Italian seasoning
  • salt/pepper
  • 10 oz. frozen spinach, thawed (I used fresh spinach)
  • 16 oz. bow-tie pasta, cooked
  • 1/2 cup Parmesan cheese, shredded
  • 1 1/2 cup mozzarella, shredded
  • Brown ground beef with onion and garlic.  Put in crock-pot and add sauce, tomatoes and seasonings. Cook for 6-7 hours on low.  Add the last 4 ingredients during the last 30 minutes of cooking and turn crock-pot to high.  I added the fresh spinach, pasta, Parmesan and 1 cup of the mozzarella and I mixed it all up really well.  Then I added the last 1/2 cup of mozzarella to melt on the top

Both are really really good!!!

So I have been debating a while about starting a blog, and I finally decided today that TODAY IS THE DAY!. I’m not entirely sure what I will be posting on this yet, but I have a feeling a lot of food talk and recipes. I have come to realize that I REALLY enjoy/like to cook (not to mention like to eat :)) ! Growing up my mom had to force me to cook dinner, but, to be fair it’s much easier to cook for 2 people than a family of 6!

So I suppose I can let you know what my meal plan for the week was.

Sunday– Burgers
Monday– Home made Pizza Pinwheels
Tuesday– (I have class till late on Tuesday nights so dinner is usually up to what Josh wants/feels comfortable making, and i am OK with that) Fajitas
Wednesday– Teriyaki Pot Roast with potatoes, onions and carrots (slow cooker) (one of Josh’s favorites)
Thursday– Crock Pot Ravioli, with Texas Toast and a salad
Friday– Baked Chicken Flautas with a jalapeno cheddar corn bread

I’m actually really happy to say, we have totally stuck to it!! Usually I plan for a week and it doesn’t always work out like I want it to, but I kicked this weeks butt!

I am also happy to say that I LOVE my CROCKPOT!  I use to be nervous to use it because the thought of something on while I was not there frightened me a little, but I’m sooo glad I “grew out of that”.  I seriously use it every week.

Welp, that’s a start! I hope to add pictures to my recipes, because, believe it our not, I take pictures of all my food (Josh often rolls his eyes or says oh better get out your camera when I plate my dish) but I have been saving them for the time I decided I wanted to start a blog. So there Josh,  I WIN!
